American pancakes

A firm family favourite of ours. Delicious topped with banana, Nutella, berries, bacon & maple syrup, ..... I could go on!

This recipe is pinched from BBC Goodfood, although I generally only vaguely follow a recipe. Dairy can be substituted with vegetarian or vegan options (replace eggs and milk with oil and use oat/rice/nut milk in place of butter)

135g plain flour

1 tsp baking powder

1/2 tsp salt

2 tbsp caster sugar

130ml milk

1 large egg beaten

2 tbsp melted butter

Vanilla or almond extract

Sieve the flour and baking powder.

Stir in the sugar and salt.

Mix the beaten egg and milk then gradually add to the dry mix.

Finally stir in the melted butter and optional vanilla or almond extract.

To cook melt a small amount of butter or oil in a frying pan.

Pour in the desired amount of batter or use a silicon mould as pictured.

Heat through until air bubbles appear on the upper side then flip and brown other side.
